Walnut series
Shindo-san specializes in knives typical of the Tosa region. These are hand-forged San Mai blades made of “blue” Aogami steel, featuring a double-sided symmetrical Hamaguri grind and a Kurouchi finish. As tradition dictates, the blades are marked with hand-stamped inscriptions. In addition to the kanji characters for the region (Tosa) and the maker’s name (Shindo), you’ll also find the steel type (blue inside). In this particular case, Aogami 2 steel with a hardness of 63 HRC was used.
The blades are set into octagonal walnut handles. The black ferrule is made of stabilized pakkawood.
