Fish knives
We have included fish slicing knives in this category. These mainly include knives called Deba.
They are heavy and durable knives with a thick blade suitable for cutting fish bones. The blade is wide from the root and passes into the tip in an arc. Grinding, with a few exceptions, is one-sided. The length of the blade in Japan, where it is particularly popular, ranges from 12 to 30 cm. However, we most often meet with a length of 16 to 18 cm.
