Shippu
Shippu means stormy wind in Japanese. And that's exactly how these knives arrived in the Nippon Knives portfolio. As soon as they popped out of their exclusive packaging, they immediately took pride of place in our sample room. The slogan that accompanies these knives: "A blade like lightning cutting through a dark sky" is by no means an exaggerated metaphor. But judge for yourself.
The core of the blade is made of VG 10 with a hardness of 61 HRC, the sides are coated with interlaced hard and soft steels. The result is a beautiful 63-layer damask pattern /petty and paring knife 37 layers/.
The real buffalo horn rings are the icing on the cake. It is probably unnecessary to remind that Tojiro used his DP method /prevention of decarbonization/ in the production of these blades. Japanese magnolia handles have a classic "D" shape. Despite its 63 layers, the knives are surprisingly light, just like the wind.
