The Tojiro Shippu brand is one of the most sought-after knives in the Nippon Knives range. These knives with their 63 or With 37 layers of damask, they naturally fit into the luxury segment. The Tojiro company decided to provide its customers with a similar aesthetic and high-quality delicacy at a more accessible price level. This is how the Tojiro Zen line of knives was born. Zen is a direction of Buddhism practiced mainly in Japan. A typical method of Zen Buddhism is meditation aimed at unity with being as well as enlightenment. Although it may surprise someone, the manufacturer did not choose the name Zen by chance. At first glance, you will realize their closeness to nature. Warm wooden handles and cool blades form a perfect interplay. Adherents of Eastern philosophies will easily discover references to the 5 elemental elements. Just as the elements found their place in nature, ZEN knives blend naturally with your kitchen.
The blade of ZEN knives consists of three layers. The core is forged from high-carbon cobalt steel VG-10 with a hardness of 61 HRC. The admixture of cobalt ensures hardness, but also important elasticity and anti-corrosion. On both sides, the core is covered with stainless steel with 13% chromium content. A "hair" pattern is applied to the blades - fine vertical lines that contribute to the overall elegance. The Tojiro company also used its decarbonization prevention method for this advice. The ferrule forming the partition between the handle and the blade is made of resin. Very warm and pleasant to the touch handles in the shape of "D" are made of Japanese magnolia.
ZEN knives are among the lighter knives. The Santoku knife with a 165 mm blade weighs only 125 grams. A great tool for long jobs.
