Vegetable knives

  Perfectly sliced and comfortably picked sliced vegetables, this is the domain of vegetable knives called Nakiri.

Of course, they are specially designed for this activity. The blade is square and rectangular in shape.&Nbsp; Resembles a shovel.&Nbsp; & nbsp; & nbsp; The cutting surface is flat and wide enough to allow comfortable picking.  The length of the blade is usually 16 to 18 cm. They are narrowly specialized knives and should not be missing in the arsenal of any Japanese knife maker.

An eastern-type vegetable knife with a one-sided cut is called Usuba. It is suitable for slicing extra thin slices of vegetables.
