Experiences with San Tsubame and Take knives were a clear impetus for the decision, offer our clients the best of both series. TAMAHAGANE San knives are some kind of penetration of the exceptional properties of the mentioned series. It is no coincidence that in In Japan, San means brilliance.
Japanese knives of the Western type are most often encountered with three-layer blade. The core that forms the edge itself is always made of very hard steel. This is so that the edge, which is ground at small angles, will last without sharpening as long as possible. These materials are of course very expensive and therefore they are used only in places where they have their justification / hagane /. For example, the tang of full tang types are made of ordinary stainless steel.
Brand TAMAHAGANE manufactures the cores of its knives from VG-5 steel, which is known for its high vanadium content.
This element affects the refinement of the internal grain size of the steel, thereby contributes to its homogeneity. At the same time it creates carbides that provide high abrasion resistance. The result is a respectable hardness of 61 HRC. Molybdenum takes care about decrease of brittleness in VG-5. The 0.65mm core is on both sides lined with a layer of SUS 410 steel. Its 13% chromium content makes it anti-corrosion steel. The softer outer layers add complexity to the blade, facilitate grinding and provide protection against corrosion. The total thickness of the blade at production by gradual folding and rolling is reduced from the original 20mm to the final 2mm. This process removes unwanted impurities from the material.
Yet what San knives "borrowed" the blades of the Take series, in the case of handles inspired by the San Tsubame type. They are made of stabilized material pakkawood. Their attractive brown color will captivate you at first sight and pleasant feeling of warm wood is an important extra bonus.
