We give each customer our undivided attention for as long as they see fit. We listen to them carefully. We ask a few necessary questions to gain a comprehensive understanding of their habits and needs. This helps us identify the type of knife that is best suited to the customer. But that is just the beginning, as we have dozens of variations within each type. We therefore begin by applying filters: construction, materials, ergonomics, aesthetics and, of course, price. We then compare the shortlisted candidates that have passed through the filters (usually 3–5 knives) in detail, highlighting both their strengths and weaknesses. This way, you can be sure you’ll get the knife you really need, rather than one the retailer is simply trying to offload. For customers who live further afield and are unable to visit us in person, we’re happy to offer advice over the phone or by email.
It is important to emphasise that all the knives on offer are physically available in-store. You can pick up each one to assess its weight and ergonomics. For those who are particularly interested in this topic, we’d be happy to explain the manufacturing process of the individual parts of the knife and the key properties of the various materials. We’ll explain the best ways to sharpen them and demonstrate them to you as well. We’ll advise you on what you absolutely need to have and what’s just a bonus for serious enthusiasts. We’ll select the right sharpening tools for you, tailored precisely to your needs.

If you’re one of those who leave sharpening to the professionals, that’s no problem at all. We have one of the best Japanese knife sharpeners in the country. He’ll give your blades the very best treatment on a high-quality Japanese whetstone. He sharpens the blades to an angle accuracy of 0.1°, working exclusively by hand without any electric tools. On request, we can provide you with images showing the microscopic details of your blades. If someone careless has taken your knife and nicked the edge, or chipped the tip, do not despair. As part of your next sharpening service, we will repair the blade to your complete satisfaction.
