We bring you a nice knife from the workshop of Yoshida Hamono from the island of Kyushu. The nice Ajikiri is a small universal knife in Japan often called Ko-Bocho /small knife/. It will functionally replace the more famous Petty knife.
The San Mai blade has a core of SUJ2 steel. It is also referred to as bearing steel, as it was primarily developed for this purpose. And since the bearing must be dimensionally stable, this property is equally well suited to the blade edge. The hardness is above average /62-64 HRC/ and such a low proportion of chromium at 0.95-1.10% carbon content can be assumed. It reaches only 1.5%. It means that the material is not anti-corrosive and requires increased care. However, the reward will be the excellent cutting performance of the symmetrical Hamaguri edge as well as the easy grinding.
Due to its shape and size, this knife is not only practical but also beautiful. It's thanks to the dark Kurouchi blade and the variety of handles that take you on a little excursion to Japan. In the morning you will walk along the sand dunes in the Tottori region, in the afternoon you will dive to the local cliffs in Okinawa, you will admire the sunset in Kyoto, and at night you will have a fun in Tokyo.
