Kiritsuke is a very popular knife in Japan. You will find it in the hands of the best chefs. Its versatility stems from the fact that it is a combination of the two most commonly used knives, the yanagiba and the usuba. It serves as well for slicing vegetables as it does for slicing meat and fish. This knife is an example of perfect ergonomics and uncompromising materials. Anyone who knows the brand Mcusta Zanmai knows that it is technologically one of the most perfect knife manufacturers not only in Seki, but throughout Japan. And when the Hasegawas introduce a new line of knives called the ZANMAI Revolution, it really require our attention.

So let's look at how these knives are revolutionary. At first glance, it is clear to everyone that the bearers of progress in this case will be mainly the handles. While compulsory skating in the premium Japanese knife class is the octagon, the Revolution series has added two extra edges. Yes, in this case we are talking about the Decagonal handles, which has its world premiere right here. However, such a dry statement in no way captures what will rest in your palm with incredible naturalness. Without exaggeration, we can talk about the symbiosis of edges and arcs. They meet and intertwine with each other and create an expressive theater for your sensations. Well, not self-serving. The result is an ergonomically perfect grip that many of us have become accustomed to. The bonus is low weight and ideal balance.

You can choose from two materials. Fans of wood will reach for its stabilized version of pakkawood, while they can choose a black or red-brown shade. There is also a very durable and elegant micarta in an attractive green color. The arched handle decorated with a traditional mosaic pin is subtly separated from the bolster by a red resp. white ring. Small detail with a strong effect. The bolster is carefully milled from an alloy of silver and nickel.

It rarely happens that in the description of the knife, the handle takes precedence over the blade. Well, don't worry, the blade is just as attractive in this case, only the term "revolution" is tied to unusual handles. The working part of the knife consists of a blade San Mai . Experts know that this is a layered material, where the hagane / core / is lined on the sides with a softer material. The steel was not supplied to the core by anyone other than Takefu Steel Company. It is a top SPG-2 processed by powder metallurgy. This steel is often referred to as SG-2 which means Super Gold. The carbon content is up to 1.25-1.45% and therefore the hardness of the core is over 61 HRC. 14 - 16% chromium ensures high corrosion resistance.

The satin blade contrasts beautifully with the edge itself. The irregular interface is a direct reference to the mythical Japanese swords.

Marusho Industry Inc. - a company producing refined Mcusta pocket knives, luxurious Zanmai kitchen knives and iconic Silky scissors - located in the center of Japanese cutlery, in the city of Seki. The city gained this status already in the middle of the 13th century thanks to sand with a rich content of iron ore, high-quality peat and water sources. These were the reasons why the renowned sword maker Motoshige relocated to this area from the island of Kyushu. During the Muromachi period (1338-1573), more than 300 blacksmiths worked in Seki. Among the most famous were Kanemoto Magoroku and Saburo Shizu. Seki swords quickly gained a reputation throughout Japan.

The Marusho company was founded in 1964. Today, it is run by the founder's grandson and his family. It operates one of the most advanced knife factories not only in the city of Seki, but in all of Japan. Thanks to advanced technologies (laser cutters, CNC mills, 3D CAD/CAM projection), the company produces products refined to the smallest detail. The best example is Zanmai brand kitchen knives. But without manual finalization by experienced craftsmen, the products would be far from perfect.

Zanmai means Luxury in Japanese. However, the word is actually derived from the Sanskrit "Samadhi", which is the term for the process of meditation leading to consciousness. It is not known how deeply the Hasegawa clan devotes itself to meditation, but this matter is more than clear. Their knives are consciously polished to the highest luxury.
