Product detail
Japanese knives are known for their exceptional sharpness. Of course, this is justified, as we are used to with the Japanese. Their cuisine demands an extremely clean cut, without pressure on the tissues. It is not just a question of aesthetics, but of taste itself. This avoids unwanted leakage of gravy. The Japanese blade is therefore steep and usually has a 15-20° angle on each side of the blade axis. With slicers, this is even less.
The ideal tool for sharpening Japanese blades is whetstone. After all, the vast majority of Japanese manufacturers finish their blades in this way. Quality Japanese stones are very effective, but working with them requires some skill and training. After all, to achieve the desired angles on both sides of the blade takes patience as well as the necessary practice. However, there are devices that not only make the work easier, but also add a professional touch to the result. We are bringing you one such system.
The system we are presenting to you is neither revolutionary nor unique. Its principle of operation can be found on similar products from different provenances. Why reach for this one with a confident price tag and moreover made in Russia? The answer is surprisingly simple. Because of that reason!
The city of Izhevsk is known around the world as the birthplace of the unsurpassed AK-47 Kalashnikov submachine gun. The TSPROF KO3 grinding system has much more in common with it than just its birthplace. It is above all robustness, reliability, accuracy, complexity, and ease of operation.
Robustness - the body of the system alone weighs over 2kg. If you do not use a G-clamp but a cast iron stand, add another 3kg. That is already the attribute no other system can match. And looking at the size of the main bearing case, you will be left in mute amazement.
Reliability - Russian engineering is used to producing products that have to perform even in the harshest conditions. And do not assume such prevail in your workshop. The sheer size and oversized mass of the base material and components are an important aspect of reliability.
Accuracy - nothing is manufactured in a so called way of making on the knee. This is serious machine manufacturing using CNC cutter and lathes. Only high-end materials such as anti-corrosion steel, titanium and aerospace aluminum alloy are used. The 700mm long abrasive guide rod and the 300mm plan distance of the thread head from the ground blade is unique, ensuring unprecedented grinding precision with an angle setting step of 0.1°.
Complexity - a multitude of clamps, adapters, abrasives and accessories allow you to sharpen a large variety of blade types and sizes.
Ease of use - follow the included instructions to quickly assemble and calibrate the system. The use itself is simple and intuitive.
WHO IS THE SYSTEM FOR
Do you care about the condition of your knives? Do you like sharp blades? Are you a perfectionist and care about precise blade angles? Do you dislike giving your knives to unknown sharpeners? Do you enjoy doing your own work, but are not so confident in your technical skills? If you answer one big YES to this set of questions, the KO3 sharpening system is for you.
We have prepared a special TSPROF sharpening system kit for you, which we have aptly named KO3 Nippon Knives Edition. We have configured it to take into account the specifics of Japanese knives. This means that you will find clamps for clamping blades with smaller thicknesses, you can easily adjust Japanese angles of 15-20° (top 30-40°) and, in addition to the very effective Russian Venev diamonds, the kit also includes high-quality Japanese KASUMI waterstones. We have not forgotten the special adapter needed for sharpening bladeshamaguri /konvex/.
The TSPROF KO3 KNE sharpening system is an open system. This means that it can be supplemented with various accessories and attachments. This makes it extremely versatile. The current set-up is tailored especially for Japanese knives. You can use it on virtually all types of commonly available Japanese knives, whether they are made of traditional high carbon steels such as kigami, shiroga, aogami, or modern anti-corrosion AUS, VG, ZDP or powdered SPG, SKD, SRS... The system can cope with European or American blades all the more easily.
The system can be supplemented with various clamps, abrasives, microscope and other accessories. You will then also be able to sharpen, for example, scissors or chisels and monitor your progress with up to 500x zoom, or measure angles with a laser goniometer.
Good news for those who want to have their knives precisiosly sharpened on this system but are not considering owning one. They can find the solution here: www.pazurik.sk
