It is formed by a massive monolithic layer of cobalt VG10 with a hardness above 61 HRC. The spine is a respectable 2mm, which is 0.5mm more than its predecessor, but the edge is just as subtle. This, together with the stoneware layers, is the key to the truly incredible cutting performance. Add the Hamaguri shape and you have a champion in more than just its class. So let's summarize its key features. You cut with the knife smoothly, easy and without the need to apply pressure. The blade slides through the substance without increased friction. The cone shape with the Hamaguri edge and stoneware surface makes it easy to separate the blade from the substance. The knife does not need to be degreased, just rinse it and wipe it with a napkin.
