The Japanese manufacturer Tojiro was not idle during the Covid-19 pandemic. In truth, strong domestic demand, which had reliably drained the vast majority of export capacity, gave him no chance to do so. All the more surprising are the two new products that are now hitting European market. Let's take a look at one of them.

Oboro is an expression describing something hazy, out of focus. This is exactly how the paintings painted in ink on washi paper look. It is a traditional way of painting with a brush. Washi paper is very absorbent and therefore the monochromatic contours of individual objects look mysteriously bleired. The legacy of this technique is found in the graceful handles of durable Micarta. Their slender teardrop shape and decent black and white combination look extremely elegant. Take them in your hand and they will rest just as elegantly in it.

The handle, fixed with a miniature mekugi pin, passes into a steel bolster. The blade "grows" smoothly from it. The latter cannot be described as anything other than an ethanol in its class. Typical Japanese San Mai construction. Core of proven VG-10 with Tojiro's typical decarbonization prevention and anti-corrosion milder steel on the sides . The result? A firm blade with excellent symmetrical edge retention, and when it comes down to it, it's a pleasure to sharpen it again. Add superior corrosion resistance and almost zero maintenance. Simple, practical, functional.

Despite the fact that the composition of the knives is simply ideal for home use, the individual knives are certainly not to be missed even by professionals. Just look at the material composition and all doubts go away. The collection is put together in such a way that you always have the right knife in your hand for all the most common tasks. The Petty with its 13.5cm blade will also stand in for a paring knife, the Utility is not only a great prep knife but its 16cm blade will be the clear choice for those to whom long steel presents too much respect. Of course, you will find the Santoku knife, which is most useful for vegetables, and you cannot miss the Gyuto main knife with its sympathetic 20 centimetres.
