Product detail

As we have already announced, we are bringing more products bearing the Masahiro brand. It would be a shame not to give our clients the opportunity to get acquainted with the products of this important manufacturer.

Although Masahiro has its own very high quality steel MBS-26, it is obvious that with such an extensive product range, it will also draw on external sources. In particular, Takefu Special Steel Co. seems to enjoy a lot of trust. It is from this manufacturer's portfolio that the Silver No.1 steel comes from. This is a high carbon steel /0.95-1.05%/ with a similar composition to White No.2, which can be found in the core of the popular bunka MC-80. As long as the carbon content is the same, Silver No.1 has a significantly higher chromium content. This is why this steel is also commonly called Chromax. Although free chromium is more abundant than it is in traditional Japanese Carbon steels, its percentage is at 5 percentage points. It is thus the so-called semi-stainless steel. Although it does not resist moisture as bravura as steels with 13% chromium, it is a great balance of hardness /60°HRC/, durability and grinding ability.

Like Tojiro, Masahiro also uses decarbonization-prevention steel. This means that in the manufacturing process, the steel is not heated to critical temperatures where carbon loss occurs. The blade is a triple layered /San Mai/ where the aforementioned Silver No.1 core with a symmetrical "V" blade is lined on the sides with the softer anti-corrosion steel SUS-410L. The blade is aesthetically decorated with traditional kanji characters and a sculpted shinogi line that separates the hamono from the rest of the blade.

Handles made of reddish stabilized pakkawood are called hybrid. While this is an Eastern "D" shaped handle with half tang construction, it has a milled steel bolster and two reinforcing rivets. The hybrid handles give the knives a very interesting character as well as a welcome robustness.

From the Masahiro MC 700 collection, we have selected the Santoku utility knife, the Nakiri vegetable specialist, and the Funayuki knife, which takes over as a smaller chef knife. These knives confirm Masahiro's commitment to delivering interesting knives where quality exceeds price.

About producer

Masahiro

MASAHIRO is one of the largest Japanese companies in the field of professional kitchen knives and cutting equipment in the meat processing industry. Its share in the Japanese market is up to 80%. This giant in its field uses its own steel MBS-26. It is a very high-quality anti-corrosion steel with a high proportion of carbon /0.85 – 0.95%/. To achieve the best properties, MBS-26 is processed in three thermal processes, including so-called sub-zero treating using cryo chambers. The result is not only hard /HRC 58-59/, but also tough steel that does not require any maintenance.
