Product detail

Shirogami or White paper steel is an ideal material for the production of traditional knives of the eastern type. This steel is characterized by a high carbon content, which is synonymous with hardness. This usually reaches over 61 HRC. However, it also requires maintenance as it tends to corrode. Therefore, the knives must be rinsed, dried and oiled after use, as sushi masters do. But you don't have to worry, the whole care is easier than it seems. You can use Hamono Abura oil or Camellia oil from our offer. Finally, insert the knife into the paper package that is included in the package. The Shirogami core is protected on the sides by softer steel. This makes it easier to sharpen knives on ceramic stones.

These beautiful and traditional knives have a double-sided edge, which is still closer to our needs. The blade is in a dark rustic design / kurouchi / and is separated from the oak handle in the shape of "D" by a resin ferrule.
