Sumikama Cutlery - manufacturer of the brand KASUMI - is one of the most important Japanese knife manufacturers. It is particularly famous for its line of KASUMI Damascus, which pioneered Japanese Damascus blades in Europe. Sumikama Cutlery's product portfolio is extensive and we are delighted to see it continually expanding. The latest addition is the very practical professional kitchen scissors.

Despite the fact that a knife is a very versatile tool in the kitchen, there are many tasks that a pair of scissors can handle more brilliantly. It is not just about opening paper or plastic food wrappers, but also cutting fish bones, seafood, poultry, etc.

The fact that this is a professional instrument is evidenced by its construction and the materials used. The scissors are robust with an overall length of 240mm. 1K6 vanadium-molybdenum steel has been used. It has been hardened to a very reasonable 56 HRC at the Daido steelworks. It is therefore hard enough to hold a blade while not being brittle, a feature that is exceedingly necessary in such scissors. The strength is achieved by the 3mm thickness of the material and the slight curvature of the blades. It is this curvature that reliably distributes the pressure on the blades. The blades have a satin finish, which gives the scissors a touch of exclusivity. The designers have gone even further and armed the blades with fine serrations. This helps to better grip the food and prevents possible slipping. The handles are made from a combination of polypropylene and elastomer. This material is not only durable but ensures a very comfortable fit.
